Think desserts for barbecues or camping events and S'mores, a guaranteed crowd-pleaser, automatically comes to mind. It's a perfect choice for a break during a meeting, a unique dessert or an evening snack. If your event is multi-day or your team building or executive retreat involves overnight camping, it's important to also have some variety.
Here are some interactive desserts for camping or any outdoor event that involves barbecuing. They will work in just about any setting.
The first two photos were taken during desert team building retreats my company organized and facilitated in Dubai. The dough was cooked on a traditional Bedouin grill. When we offer Survivor-inspired team building retreats that combine outdoor team challenges with facilitated business exercises, some of them involve an overnight stay at campsites or in the wilderness, the desert, mountains, the jungle and even in quinzhees during the winter. We have found that all that is required to prepare dessert over a campfire is a grill and aluminum foil or a dutch oven to prepare these tasty delights
Some desserts require skewers or sticks. Others require a cooler and ice packs or a portable freezer to keep the ingredients cold until it is time to prepare them.
First some tips for desserts and other recipes that require a batter or dough:
- Pre-mix all dry ingredients together.
- Bring milk and eggs in a cooler or opt for milk powers or evaporated milk and an egg substitute like Egg Beaters.
- Mix wet and dry ingredients together just before cooking over an open fire, on a stick, on a grill, or in a dutch pot.

This year round treat, which is enjoyed by Inuit in the U.S. and Canada, is simple to prepare. Create or purchase a basic dough. (Pizza or crescent roll dough will do.) Mix in sugar, raisins, and, if you like, chocolate chips . Shape the dough around a stick. Cook it over an open fire.
3. Fruit Cobbler
Start by picking fresh berries or other fruit that is in season. Place the berries at the bottom of your dutch oven. (Slice larger fruit like apples or peaches.)

To prepare this warm treat, start with a banana that is well ripened Slice the banana about half way through (on the long side). Insert chocolate, marshmallows and other treats. Wrap in foil and place in on the grill. Let is cook for 20 - 30 minutes.
7. Fruit Brochettes
Place seasonal fruit on a BBQ or shish kebab skewer. Place the skewers on the grill until the fruit is warm. Enjoy.
