Fruit Infused Water Stations
In desert environments and the tropical belt, it is important for guests to drink plenty of water.
The City of Charlotte displayed made water appealing and still keep it healthy with a fruit infused water station. They provided bottles of cold water and carafes of hot water and a variety of fruit segments that attendees could add to create their own flavor combinations..
Just about everybody loves sliders. At its "Red" Party, Four Seasons Resorts presented a new spin on an old favourite with a variety of sliders. There were crab cake sliders, BBQ chicken sliders, and beef sliders with smoked cheddar.
At I ♥ Burgers, 2 days later I sampled the delicious turkey meatball sliders. There is never a need to fall into a rut with sliders.
Guests were also treated to lamb chops, salmon, and signature cocktails in keeping with the "red" theme.
Unexpected Sweet Touches
At the Preferred Hotel Group dinner at Bazaar Meat by Jose Andres, in an unexpected combination of textures and flavors, foie gras was enveloped in cotton candy and served on a stick.
Pastry by the Box
At the end of a delightful evening of exploring meat, seafood and tartares, Bazaar Meat by Jose Andres surprised guests by placing large red boxes on each table. Each box had a collection of pastries straight from the patisserie. Guests had fun interacting and making choices from the absolutely orgasmic selections.
Small Bites, Big on Flavour
The Fresh dinner always focuses on small and healthy dining options. For IMEX America, they served up:
- Hors D'oeuvres: Mini Kalbi Beef Taco, Asian Pear, Black Sesame Lemongrass-Ginger Chicken Potsticker, Sweet Soy Reduction Roasted Cauliflower Fritter, Blackberry Aioli
- Starter: Roasted Butternut Squash Soup with Pistachio Gremolata and Creme Fraiche
- Entrée: Trio of Pan Seared Scallops, Potato Puree, Crispy Pancetta, Vanilla Beurre Blanc, Cream of Corn "Egg Yoke" Spiced
- Dessert: Pumpkin Panna Cotta, Carrot Cake, Candied Pecans, Toasted Marshmallow
