What's Hot: Dining in Water (Part II)

Splash Dining, Dove MountainWith Toronto temperatures soaring past 30º C (86º F) this week, I again felt inspired to think about creative ways to beat the heat.

A few weeks ago, I discussed Dining in Water, a culinary trend that some resorts and restaurants in Asia and Polynesia have been offering. In another blog post, I have stressed the importance of ensuring that participants keep their feet warm in order to stay warm during outdoor winter events. Dining in Water applies the same principle but in reverse. If guests relax and keep their feet immersed in cool water, they will be cool and comfortable even on a hot day.

The good news is that this unique culinary experience is available even corporate groups that don't have the budget for travel to experience lagoon lunches in Bora Bora or "dining in water" in Asia. Gradually, properties closer to home are giving groups the opportunity to dine while they stay cool and comfortable in water.

Ritz-Carlton Dove Mountain (Arizona)

Two years ago, Ritz-Carlton introduced Splash Dining at Dove Mountain Resort and Spa in Arizona's Sonoran Desert. For this, new culinary offering chairs and tables are placed in the Turquesa pool which is filled with cool water. Guests are encouraged to wear knee length pants or skirts. They wade to the tables and, as they dine, guests dangle their feet and legs in the refreshing water. As they serve the 3-course gourmet dinner including champagne, waiters wear a special aquatic version of chef's whites. As temperatures climb, diners and waiters all get welcome relief from the Arizona summer heat.

Sandals Resorts (Caribbean)

Water Dining, Sandals Sandals Resorts offers at Sandals Whitehouse in Westmoreland and Sandals Montego Bay. Dining tables and umbrellas are placed in 2 feet of water. Guests cool off as they enjoy butler service and a lavish buffet with international gourmet cuisine and scrumptious desserts.

Sandals Halcyon Beach in St. Lucia offers "over the water dining" at Kelly's Dockside that is suspended over the sea at the end of a pier. Cool breezes and keep guests refreshed as they savor gourmet seafood delights.
